The production of “Methode Traditionelle” sparkling wines has been an integral part of the winemaking at Blue Pyrenees for many years. This unique sparkling wine is made entirely of fruit harvested from theis estate vineyard. Vintaging, maturing and packaging also occurs on site. This dry rose sparkling wine is predominantly made from selected parcels of the red grape Pinot Noir resulting in a pink wine that is aged with yeast lees in the bottle for 6 years before release - served well chilled.We Say
When I first came across to Melbourne, the Pyrenees had a bit of mystique around them - I had images of lederhosen clad winemakers called Stella und Fritz making wines with kinky nomenclatures such as my personal favourite, "trockenbeerenauslese" but no, its just a quite hilly place on the way to the snow fields...but one that, thankfully, produces some quite lovely wines...historically they have produced loads of sparkling wines (for obvious reasons) but also have some cracking reds. I like Brut Rose's - especially if they veer away from tacky sweetness - this is classically dry with biscuity notes and complexity from 6 years (yep, 6!!) in bottle before release.-
